I like veggies and put as many as I can into every meal I can. My kids will usually eat them with little argument but sometimes a little switch-a-roo gets them to eat more than they normally would. Like replacing lettuce with spinach on all of our sandwiches.
Anyway, why I am talking about veggies? Because today I will be making some wonderful stuffed peppers for dinner. The original recipe was given to me by a friend(thanks Tina) I have made some changes to make them "mine", today I am going to change them yet again. Usually I use ground meat (lean of course) for the stuffing today I am going to flake some fish and use it along with the ground meat. I usually use whatever veggies I have available, I sauted some this morning (then used a small amount in my eggs). I will explain how it all comes together on the recipe page.
Veggies used today - asparagus, cauliflower, broccoli, orange pepper, onion, spinach and tomato. All were cooked up with one tsp of evoo. I will be stuffing yellow, orange and red peppers(not a fan of the green ones).
